all those greens...


Remember the roots we brought in from the garden a few weeks back and planted in sand? They are going so great - it is very cool to watch. The boys think they can see the fennel growing every day!

The fennel (above) is shooting up nicely, and we should have enough to snip for salads/seasoning soon!


The purple cabbage root we planted is sprouting nice big cabbage leaves.


And the parsley - oh the parsley. It is growing so fast! We have been snipping almost daily to use in stock, soups, salads, and stir fries. And this is from a root! We've been impressed at how much is growing in such a short time from roots we dug up out of our garden only a few weeks ago.



All of our seedlings are doing great - the mustard greens and lettuce mix are the biggest so far and the tomato seedlings are looking good. The boys helped transplant a bunch of the plants into a larger open tray, and have been tracking the plants. 

It has been an interesting project so far and we look forward to reaping the results!

FANTASTIC GREENS! What a great project to have going on in the house.

This is so successful and inspiring! We plan to set up some sort of growing light system over the holiday break. The difficult part is working this out with three cats that munch on all my greens. We've thought about making mini chicken-wire fences like I use in my garden, etc.

If that cats would just stay the heck off the counters and tables, it would make my life so much easier. ;)

I never would have thought it was possible to grow all this inside...you really have a green thumb! Your family will be eating such healthy delicious food all winter long.

That looks so delicious! Fennel grows wild here, but I should have tried growing our own this year--it's a new discovery in the kitchen, cooking with fresh fennel bulbs (as opposed to just the seeds). This year is OUR first winter garden and I'm gobsmacked with delight in how quickly everything has grown up, too. I figured the growing period would be longer because of the cold--but no, just as fast as summer garden to grow. the kids LOVE it!

Jodi - My cat is a bit older so doesn't eat greens anymore, but boy she used to!

Elisheva - I'm using regular shop lights - with one cool bulb and one warm bulb. If we am home and it is sunny we are also placing the tray in sunlight a bit!
